Quick Pickle Recipe

Pickles are truly one of my top five favorite foods so this time of year when I end up with more cucumber then I know what to do with, making pickles is my favorite activity. This is also a great activity to do with kids or school garden programs. My favorite thing about this recipe is that it is no-heat so you don’t need access to a kitchen or heating element to make them. However, because they are no-heat they need to be refrigerated immediately and consumed within 7 days.

This is a basic recipe but could easily be modified to different vegetables or different flavors. You can pickle carrots, green beans, asparagas, cauliflower and more. Adding different herbs, spices like coriander or red chili flakes can give you different flavorings in your pickle.

No-Heat Quick Pickle Recipe

Ingredients:

• 4-6 mini cucumbers (or 2 large cucumbers)

• 1 cup white vinegar

• 1 cup water

• 1 Tbsp non-iodized salt

• 1 Tbsp sugar

• 1 clove garlic (crushed)

• 1 sprig of dill (chopped)


Instructions:

Combine all ingredients, let sit for 24 hours in refrigerator. Enjoy within 7 days.
